favorite photo friday ~ fall food

I tell ya, this is my absolute favorite time of year for food. Every fall, I stock my pantry with cans of pumpkin and then hope that I can find new recipes to use it in. Well, last weekend, I was drinking my coffee and goofing off on Facebook (as I often do on a weekend morning) and noticed my neighbor had posted that his "better half" had made him pumpkin chocolate chip cookies. Ummmm, yes please! I immediately commented that I'd like the recipe and within minutes our doorbell rang. Not only was the recipe delivered (hand written on a card with cute Halloween stickers on it) but there was also a huge plate full of said cookies all wrapped up pretty and ready to eat! Do I have great neighbors, or what?!?! They were so yummy that I couldn't wait to make my own batch and I just have share the recipe with all of you. If you like hard, crunchy cookies, then just stop reading now and what the heck is wrong with you? because these cookies aren't for you. If you're normal you love a soft, moist cookie, then get ready to hit "print" because you're going to want to make these over and over!

Pumpkin Chocolate Chip Cookies

1 cup pumpkin
1 cup sugar
1/2 cup oil
1 tsp cinnamon
1 egg
2 cups flour
2 tsp baking powder
1/2 tsp salt
1 tsp vanilla
1/2 cup walnuts (optional) yuck
1 cup chocolate chips
1 tsp baking soda dissolved in one tbsp milk

Combine pumpkin, sugar, oil and egg. In a separate bowl, mix together flour, salt, baking powder, and cinnamon. Add to pumpkin mixture along with dissolved baking soda and mix well. Stir in chocolate chips, nuts not and vanilla. Drop onto lightly greased baking sheet and bake @ 375 for 10-12 minutes. Makes about 3 dozen. (I got almost 4 dozen using a #60 scoop)

Found a recipe for Apple Cinnamon Pumpkin Bars yesterday that looked good. Might have to give those a try too!

They are yummy! Made a double batch and the first 2 dozen were gone within seconds of my son and his friends walking in the door!
